Our story
When this restaurant was being developed, the team wanted something that evoked the Yukon spirit and wilderness. A warm, nourishing, and hospitable invitation while maintaining a memorable ring to the name.
The team liked the image of a bison because it related to the North’s hearty, grounded identity. Represented by the strength and community of a bison herd. This thought was paired with the idea of the “belly,” which naturally connects to food, nourishment, and comfort, giving the name both a rustic authenticity and a culinary twist. The name isn’t just about bison meat, it’s meant to capture the feel of warm, elegant comfort food rooted in northern culture and connection.
